Bircher Muesli

Ingredients

2 cups gluten free steal cut oats
1 cup of fresh orange or apple juiceFacebook image 20160303_070947
1/2 cup organic sultanas
1/2 cup ground nuts
1/2 cup dehydrated coconut flakes
2 mashed bananas
2 chopped oranges
2 grated apples
1 cup natural yoghurt (dairy or coconut)

Blueberries to top – optional

Method

Soak the oats overnight in the orange or apple juice. It is best to use a glass container for this purpose. In the morning you simply stir through the remaining ingredients. This can be served as is or with additional coconut milk to make it more like a breakfast bowl.20160303_070907

This muesli also makes a wonderful lunch box addition. Simply place in glass jars with a tight fitting lid.

NB Oats contain avenin, which is a protein similar to gluten. However, research has shown that most people with coeliac disease can safely eat avenin. Problems can occur if oats are produced in the same place as wheat, barley and rye, as the oats can become contaminated with these other grains.
